With red food die the only thing that you can not stain is probably stainless steel.
Moreover, if the lemon juice and the oil were not absorbed by the stone it only means that the stone can't be sealed. In other words, the sealer will not go inside it – period. And it is understandable, because although all the stones you listed are naturally on the absorbent side, they are among the most likely candidates to the resining process, which permanently offers the best sealing performance possible.
So, if you plan to use food dies on your countertop, you already know what kind of surface you have to choose…
