Is somebody perhaps suggesting you that the water goes through the core of the stone and let the level drop???…
Sealed or unsealed, there are only two chances to that: No way and now how!
Unless the holes of the slab were not properly filled, of course. But even in that extreme case it would be highly doubtful that it could cause a situation like the one you're experiencing.
Check every inch of the grout and caulk lines and you will eventually discover where the water disappears through.
