Since you already know that nothing will prevent etching (“water spotting”) I will not go there.
As for the staining, the application of a good impregnating sealer like MB-4 will help a great deal. Just keep in mind that 100% sealing does not exist. Impregnating sealers only give you reaction time: the better the product in relation to the particular stone, the longer the reaction time. This translate into the idea that you can't let spills sit on stone forever and expect them not be absorbed because it was sealed.
Needless to say, what your friend will be using to daily care for her stone is paramount, too!
