I would go the hone-finished version. The reasoning behind this is that the polished version has too high a surface tension to allow the stone to be sealed with a good-quality stone impregnator. With its hone-finished counterpart instead it is possible to seal it properly with a highly oleophobic impregnating sealer like MB-4.
My recommendation is that you do the sealing twice, with an interval of at least 12 hours between applications, a couple of days before the installation. This will allow you to do the sealing hori
