The reason why I generally do not recommend limestone for a shower stall (or for a floor, for that matter) is because you never know what kind of limestone one's dealing with, and all too many of them are not recommendable when not downright disgraceful. But there are exceptions, and, luckily, Jerusalem Gold is among them. It is quite a dense limestone in the dolomitic side, which makes it a good material for your project.
As for the sealing, unless you can envision someone in your family going inside your stall and painstakingly start rubbing wet coffee grounds or cooking oil on the walls and floor until, finally, he or she will accomplish the goal of getting a stain (which would be easy to remove anyway), I don't see any utility in the attempt of pushing some alien resin inside your stone.
