Not certainly you, but a proficient stone restoration contractor could, by using diamond pads first, and then finishing the job with a good -quality honing powder, to assure uniformity. The problem will be along the backsplash: considering the hardness of the stone and the consequent aggressiveness of the honing means, it is almost impossible to hone all the way against the backsplash without affecting it, too.
Bear also in mind that, depending on the type of your stone, you will loose depth of color. (The darker it is when polished, the more depth of color you will lose.) With darker stones this will create big maintenance issues in the form of frequent an uncontrollable surface staining. Only the application of a good-quality stone color enhancer like MB-6 instead of a regular impregnating sealer will overcome that.
