marble kitchen countertop cleaning

what should I use to clean and protect my kitchen countertops, they are white carrera, I have a partial bottle of italian craftsman polish that the installer gave to me, but it does not remove the moisture ring marks. I have heard not too use anything with ammonia, is that true ? can I buy something to clean it properly or do I need to mix something myself?

White Carrara marble in a kitchen?... And then you worry about some acid etching (what you call “moisture ring marks”)?... Hmmm…
