Granite or not granite?

I've noticed a few questions about granite that it seems to turn out that it is not really granite - but some other stone mixtures. How do you know what is 'real' granite?

Stones traded as granite that are not true geological granite are not “stone mixture” (which sounds like if it were some sort of manmade material like engineered stone or something); they are still 100% natural stones. The only difference is that they are not granite. Diamond is a stone and so is Ruby; but though both natural products of Mother Earth, they are not the same thing, are they?

While keeping in mind that certain “granites” are disgraceful to say the least, but many are just as good or even better than true granite, the question remains: How do you know which is granite and which is not?

Since no stone distributor seems to be able to tell you the difference, you study a bit of petrography and you learn how to tell them apart.
