Carrara vs Statuary marble

We are picking out a slab of marble for our kitchen island and yes we are aware of the extra care required! We went to the yard thinking we wanted Carara marble but found the current slabs to have extreme gray veining. Statuary white is more sublte veining. Can you tell me if there is a staining/porous/maintenance difference between these two types of marble. Thanks for all your insight.

No, there's no difference. Like most other marbles, neither one is very porous.
Maintenance? Extra-care?
Unless you will be using your island just to hold the telephone you use to make reservations or order take-outs, there's no such a thing like maintenance and extra-care. They're both going to be maintenance nightmares by American standards.
